Puff pastry
1 sheet, thawed
Tomatoes
4-5 medium, sliced
Goat cheese
4 ounces, crumbled
Fresh basil
1/4 cup, chopped
Fresh thyme
1 tablespoon, chopped
Olive oil
2 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry sheet to fit a baking sheet. Transfer the pastry to the baking sheet, making sure to leave a small border around the edges.
  3. Prick the pastry all over with a fork to prevent it from puffing up too much during baking.
  4. Layer the sliced tomatoes evenly over the pastry, slightly overlapping them for an appealing presentation.
  5. Sprinkle the crumbled goat cheese, chopped basil, and thyme evenly over the tomatoes, allowing their flavors to meld beautifully.
  6. Drizzle the olive oil over the tart and season generously with salt and pepper for added depth.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the tomatoes are slightly caramelized and tender.
