Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and diced onion. Stir-fry for 2 minutes until fragrant and slightly golden.
- Stir in the diced carrots and frozen peas. Continue to stir-fry for another 2 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through, then mix them with the vegetables.
- Add the chilled jasmine rice to the skillet and stir-fry for 3-4 minutes, breaking up any clumps to evenly distribute the ingredients.
- Fold in the cooked crab meat, soy sauce, fish sauce, and lime juice. Stir-fry for an additional 2 minutes until everything is well combined and heated through.
- Remove from heat and garnish with chopped cilantro and green onions.
- Serve hot with lime wedges on the side for an extra zesty kick.
Tips
- For an extra layer of flavor, consider adding a teaspoon of oyster sauce or chili paste during the stir-frying process.
- Feel free to substitute the crab meat with shrimp or chicken for a different protein option.
- Using day-old rice is preferred as it is drier and helps achieve the perfect fried rice texture.
