
Thai Shrimp Curry

Ingredients
- Fresh cilantro (2 tablespoons, chopped)
- Lime juice (1 tablespoon)
- Sugar (1 teaspoon)
- Fish sauce (2 tablespoons)
- Coconut milk (1 can (14 oz))
- Thai red curry paste (2 tablespoons)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Onion (1, sliced)
- Red bell pepper (1, sliced)
- Coconut oil (2 tablespoons)
- Shrimp (1 lb, peeled and deveined)
Instructions
- Heat the coconut oil in a large skillet over medium heat.
- Add the bell pepper, onion, garlic, and ginger. Cook until the vegetables are tender, about 5 minutes.
- Add the Thai red curry paste and cook for another minute, stirring constantly.
- Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes.
- Pour in the coconut milk, fish sauce, sugar, and lime juice. Stir well to combine.
- Simmer the curry for 5 minutes, allowing the flavors to meld together.
- Serve the Thai shrimp curry over steamed rice or noodles.
- Garnish with fresh cilantro before serving.
