Instructions
- Begin by soft-boiling the eggs: In a pot of boiling water, gently add the eggs and cook for 6-7 minutes for a slightly runny yolk. Remove the eggs and place them in an ice bath to stop the cooking process. Once cool, peel and set aside.
- Cook the udon noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process, then set aside.
- In a small bowl, whisk together the soy sauce, mirin, and sugar until the sugar is fully dissolved. Set this sauce mixture aside.
- Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant, being careful not to let them burn.
- Add the sliced green onions and mushrooms to the pan. Cook for 2-3 minutes until the mushrooms become tender and begin to release their moisture.
- Add the cooked udon noodles to the pan, followed by the soy sauce mixture. Toss everything together gently until the noodles are well-coated with the sauce.
- Fold in the fresh spinach and cook for another 1-2 minutes, until the spinach wilts down.
