Ingredients

  • Toppings of your choice (as desired)
  • Mozzarella cheese (1 cup, shredded)
  • Pizza sauce (1/2 cup)
  • Salt and pepper (to taste)
  • Italian seasoning (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Parmesan cheese (1/4 cup, grated)
  • Almond flour (1/2 cup)
  • Egg (1)
  • Zucchini (2 medium, grated)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
  3. In a large bowl, combine the squeezed zucchini, egg, almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  4. Line a baking sheet with parchment paper and spread the zucchini mixture into a thin, even layer, shaping it into a round pizza crust.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until it starts to turn golden brown.
  6. Remove the crust from the oven and spread the pizza sauce evenly over the top.
  7. Sprinkle the shredded mozzarella cheese over the sauce, and add your desired toppings.
  8. Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
