Servings: 4
Ingredients
- Zucchini (2 medium, grated)
- Egg (1, beaten)
- Almond flour (1 cup)
- Parmesan cheese (1/2 cup, grated)
- Garlic powder (1 teaspoon)
- Italian seasoning (1 teaspoon)
- Salt (1/2 teaspoon)
- Black pepper (1/4 teaspoon)
- Mozzarella cheese (1 cup, shredded)
- Pizza sauce (1/2 cup)
- Toppings of your choice (as desired)
Instructions
- Preheat the oven to 425°F (220°C).
- Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible to prevent a soggy crust.
- In a large mixing bowl, combine the squeezed zucchini, beaten egg, almond flour, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix until all ingredients are well combined.
- Line a baking sheet with parchment paper. Transfer the zucchini mixture to the baking sheet and spread it into a thin, round crust, ensuring an even thickness throughout.
- Bake the crust in the preheated oven for 15-20 minutes, or until it begins to turn golden brown and is firm to the touch.
- Remove the crust from the oven and evenly spread the pizza sauce over the top.
- Sprinkle the shredded mozzarella cheese and your choice of toppings over the sauce.
- Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
- Allow the pizza to cool for a few minutes before slicing and serving. Enjoy!
