Ingredients

  • Powdered sugar (1 cup)
  • Almond flour (2 cups)
  • Almond extract (1 teaspoon)
  • Granulated sugar (3/4 cup)
  • Egg whites (3 large)

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites with a hand mixer or stand mixer until they form soft peaks.
  3. Gradually add the granulated sugar while continuing to beat the egg whites, until they become glossy and hold stiff peaks.
  4. Gently fold in the almond flour and almond extract using a spatula, being careful not to deflate the egg whites.
  5. Using a cookie scoop or two spoons, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake in the preheated oven for 15-20 minutes, or until the cookies are lightly golden and set, with a slightly cracked surface.
  7. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  8. Before serving, dust the cooled cookies generously with powdered sugar for an elegant finish.
