Instructions
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the egg whites with a hand mixer or stand mixer until they form soft peaks.
- Gradually add the granulated sugar while continuing to beat the egg whites, until they become glossy and hold stiff peaks.
- Gently fold in the almond flour and almond extract using a spatula, being careful not to deflate the egg whites.
- Using a cookie scoop or two spoons, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 1 inch apart.
- Bake in the preheated oven for 15-20 minutes, or until the cookies are lightly golden and set, with a slightly cracked surface.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
- Before serving, dust the cooled cookies generously with powdered sugar for an elegant finish.
Tips
- For added flavor, consider mixing in a few drops of orange or lemon zest into the batter.
- If you prefer a more intense almond flavor, you can substitute some of the almond extract with amaretto liqueur.
- These cookies can be stored in an airtight container for up to a week, but they are best enjoyed fresh.
