Servings: 4

Ingredients

All-purpose flour
1 cup
Granulated sugar
2 tablespoons
Baking powder
1 teaspoon
Salt
1/4 teaspoon
Ground cinnamon
1 teaspoon
Eggs
2 large
Milk
1/2 cup
Vanilla extract
1 teaspoon
Apples
2 medium, peeled, cored, and diced
Vegetable oil
for frying
Powdered sugar
for dusting

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
  2. In another bowl, beat the eggs, then whisk in the milk and vanilla extract until smooth.
  3. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix.
  4. Fold in the diced apples, ensuring they are evenly distributed in the batter.
  5. In a deep fryer or large pot, heat the vegetable oil to 375°F (190°C). To test the oil, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  6. Using a spoon or a small ice cream scoop, drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan. Fry the fritters for about 2-3 minutes on each side or until they are golden brown.
  7. Once cooked, remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Dust the warm fritters with powdered sugar before serving, and enjoy them fresh for the best flavor.
