Apples
2 cups, peeled, cored, and diced
Vegetable oil
for frying
Powdered sugar
for dusting

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
  2. In a separate bowl, whisk together the milk, beaten egg, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.
  4. Fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  5. In a deep pot or skillet, heat vegetable oil over medium-high heat until it reaches 375°F (190°C). Use a thermometer for accuracy.
  6. Using a spoon, drop heaping spoonfuls of the batter into the hot oil, frying 3-4 fritters at a time to avoid overcrowding.
  7. Cook each fritter for 2-3 minutes on one side, or until golden brown, then carefully flip and cook for an additional 2-3 minutes.
