Sumptuous Apricot Cobbler Trifle

- 1 cup, divided Sugar
- 1 cup All-purpose flour
- 1 tablespoon Lemon juice
- 2 cups, sliced Apricots

Instructions
- Preheat the oven to 375°F (190°C).
- In a medium saucepan, combine the sliced apricots, 1/2 cup of sugar, and lemon juice. Cook over medium heat until the apricots are soft and the sugar has dissolved, about 10 minutes. Remove from heat and let cool.
- In a separate mixing bowl, combine the flour, remaining 1/2 cup of sugar, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Gradually add the milk to the flour mixture, stirring until just combined. Be careful not to overmix.
- Transfer the cooled apricot mixture to a baking dish and evenly spoon the cobbler batter over the top.
- Bake for 30-35 minutes, or until the cobbler topping is golden brown and cooked through. Remove from the oven and let cool for 10 minutes.
