Apricot Crisp
Indulge in the summery delight of this Apricot Crisp, where tart, juicy apricots meet a crunchy, buttery oat topping. With a pinch of cinnamon for a warm, spicy undertone and a squeeze of lemon juice to enhance the apricots' flavor, this dessert is the epitome of comfort food. This recipe has been passed down through generations and holds a special place in family gatherings. Its rustic charm is reminiscent of old-fashioned home baking, with its origins tracing back to early American settlers who adapted their traditional fruit pie recipes to the New World's ingredients.
Ingredients
- Unsalted butter
- 1/2 cup, cold, cubed
- Salt
- 1/4 teaspoon
- Cinnamon
- 1 teaspoon
- Brown sugar
- 1/2 cup
- Rolled oats
- 1 cup
- All-purpose flour
- 1/2 cup
- Lemon juice
- 1 tablespoon
- Sugar
- 1/4 cup
- Apricots
- 4 cups, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, sugar, and lemon juice. Toss until the apricots are evenly coated in the sugar and the lemon juice is well incorporated.
- In a separate bowl, mix together the flour, rolled oats, brown sugar, cinnamon, and salt. This will become the crispy topping.
- Add the cold, cubed butter to the flour and oats mixture. Use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Spread the apricot mixture evenly in a 9x13 inch baking dish.
- Sprinkle the oat and butter mixture over the apricots, making sure to cover them completely.
- Bake for 35-40 minutes, or until the topping is golden brown and the apricots are tender and bubbling.
- Remove from the oven and let it cool for at least 10 minutes before serving.
- Serve warm. For an added touch, pair this delicious dessert with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
Tips
- For a gluten-free version, replace the all-purpose flour with a gluten-free blend and ensure your oats are certified gluten-free.
- For a vegan version, replace the butter with a vegan butter substitute or coconut oil.
- In place of apricots, you can use peaches, plums, or a combination of your favorite summer fruits.
