Apricot Crumble Parfait with a Twist

Ingredients
- Honey
- 2 tablespoons
- Greek yogurt
- 2 cups
- Unsalted butter
- 1/2 cup, cold and cubed
- Ground cinnamon
- 1 teaspoon
- Brown sugar
- 1/2 cup
- Rolled oats
- 1 cup
- All-purpose flour
- 1/2 cup
- Lemon juice
- 2 tablespoons
- Granulated sugar
- 1/4 cup
- Apricots
- 2 cups, sliced
Instructions
- Preheat the oven to 350°F.
- In a saucepan, combine the sliced apricots, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally until the apricots are soft and the mixture has thickened, about 10-15 minutes. Remove from heat and set aside to cool.
- Meanwhile, in a separate bowl, combine the flour, rolled oats, brown sugar, and ground cinnamon. Add the cold cubed butter. Use your fingers to mix until the mixture resembles coarse crumbs.
- Spread the crumble mixture evenly on a baking sheet. Bake for 15 minutes, or until golden brown. Allow it to cool after removing it from the oven.
- Assemble the parfait in serving glasses or bowls. Start with a layer of apricot compote, followed by a layer of crumble and a layer of Greek yogurt. Repeat the layers until all ingredients are used, finishing with a layer of crumble on top.
