Instructions
- Preheat the oven to 350°F.
- In a saucepan, combine the sliced apricots, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally until the apricots are soft and the mixture has thickened, about 10-15 minutes. Remove from heat and set aside to cool.
- Meanwhile, in a separate bowl, combine the flour, rolled oats, brown sugar, and ground cinnamon. Add the cold cubed butter. Use your fingers to mix until the mixture resembles coarse crumbs.
- Spread the crumble mixture evenly on a baking sheet. Bake for 15 minutes, or until golden brown. Allow it to cool after removing it from the oven.
- Assemble the parfait in serving glasses or bowls. Start with a layer of apricot compote, followed by a layer of crumble and a layer of Greek yogurt. Repeat the layers until all ingredients are used, finishing with a layer of crumble on top.
- Drizzle honey over each parfait just before serving for a touch of natural sweetness.
- Serve immediately to enjoy the crunch of the crumble with the creaminess of the yogurt and the fruity sweetness of apricots.
Tips
- For a vegan twist, use coconut oil instead of butter and substitute Greek yogurt with coconut yogurt.
- You can experiment with other fruits like peaches or berries in place of apricots.
- For a gluten-free version, replace all-purpose flour and rolled oats with gluten-free alternatives.
