Ingredients

Honey
2 tablespoons
Greek yogurt
2 cups
Unsalted butter
1/2 cup, cold and cubed
Ground cinnamon
1 teaspoon
Brown sugar
1/2 cup
Rolled oats
1 cup
All-purpose flour
1/2 cup
Lemon juice
2 tablespoons
Granulated sugar
1/4 cup
Apricots
2 cups, sliced

Instructions

  1. Preheat the oven to 350°F.
  2. In a saucepan, combine the sliced apricots, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally until the apricots are soft and the mixture has thickened, about 10-15 minutes. Remove from heat and set aside to cool.
  3. Meanwhile, in a separate bowl, combine the flour, rolled oats, brown sugar, and ground cinnamon. Add the cold cubed butter. Use your fingers to mix until the mixture resembles coarse crumbs.
  4. Spread the crumble mixture evenly on a baking sheet. Bake for 15 minutes, or until golden brown. Allow it to cool after removing it from the oven.
  5. Assemble the parfait in serving glasses or bowls. Start with a layer of apricot compote, followed by a layer of crumble and a layer of Greek yogurt. Repeat the layers until all ingredients are used, finishing with a layer of crumble on top.
  6. Drizzle honey over each parfait just before serving for a touch of natural sweetness.
