Ingredients

Country potatoes
2 pounds, cut into wedges
Olive oil
3 tablespoons
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Fresh rosemary
2 tablespoons, finely chopped
Garlic
3 cloves, minced
Balsamic vinegar
1/2 cup
Brown sugar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the potato wedges with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet.
  3. Roast the potatoes in the preheated oven for 25 minutes, or until they are golden and crispy, turning halfway through for even cooking.
  4. While the potatoes are roasting, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar, brown sugar, minced garlic, and chopped rosemary. Bring to a simmer over medium heat, stirring occasionally, until the mixture is reduced by half and thickened slightly (about 10-15 minutes).
  5. Once the potatoes are roasted, remove them from the oven and drizzle the balsamic glaze over them. Toss gently to coat the potatoes in the glaze.
  6. Return the glazed potatoes to the oven for an additional 10 minutes, allowing the glaze to caramelize and infuse the flavors.
  7. Serve the potatoes hot, garnished with additional fresh rosemary if desired.
