Serves 2

Ingredients

Sriracha
to taste
Mayonnaise
2 tablespoons
Cilantro
1/2 cup, chopped
Radishes
1/2 cup, thinly sliced
Cucumber
1/2 cup, thinly sliced
Carrots
1 cup, julienned
Lime juice
2 tablespoons
Sugar
1 tablespoon
Soy sauce
1 tablespoon
Fish sauce
1 tablespoon
Pork belly
1 pound, sliced
Baguette
1 large

Instructions

  1. In a bowl, combine the fish sauce, soy sauce, sugar, and lime juice. Add the pork belly slices, ensuring they are well coated in the marinade. Allow to marinate for 15 minutes.
  2. Heat a pan over medium heat and cook the marinated pork belly slices until crispy and cooked through, about 5 minutes per side. Be sure to render the fat for maximum flavor.
  3. While the pork is cooking, prepare the vegetables. Thinly slice the cucumber, radishes, and julienne the carrots. Set aside.
  4. Slice the baguette in half lengthwise and lightly toast it until golden brown, which adds a delightful crunch.
  5. Spread mayonnaise on one side of the baguette and Sriracha on the other side, adjusting the amount of Sriracha to your spice preference.
  6. Layer the cooked pork belly slices on the bottom half of the baguette. Follow with the julienned carrots, cucumber slices, radishes, and a generous handful of chopped cilantro.
  7. Close the sandwich and cut it into desired portions.
  8. Serve the Banh Mi sandwich immediately and enjoy the explosion of flavors!

Tips

  • 💡 For extra crunch, consider adding pickled carrots and daikon radish.
  • 💡 Feel free to substitute the pork belly with grilled chicken, tofu, or even a vegan protein for a different twist on this classic.
  • 💡 Pair with a side of Vietnamese iced coffee for a complete meal experience.
