Flank steak
1 pound, sliced thinly against the grain
Bell peppers
2 cups, sliced (various colors)
Onion
1 medium, sliced
Green onions
1/4 cup, sliced (for garnish)
Avocado oil
2 tablespoons

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, minced ginger, cornstarch, beef broth, and minced garlic until smooth. This will be your stir fry marinade. Set aside.
  2. Combine the sliced flank steak with half of the marinade, allowing it to marinate for at least 15 minutes.
  3. Heat the avocado oil in a large skillet or wok over high heat until shimmering.
  4. Add the marinated flank steak to the skillet, spreading it out in a single layer. Cook for 2-3 minutes, or until browned, stirring occasionally. Remove the steak from the skillet and set aside.
  5. In the same skillet, add the sliced bell peppers and onion. Stir fry for 3-4 minutes, or until the vegetables are crisp-tender and vibrant in color.
  6. Return the cooked steak to the skillet. Pour the remaining marinade mixture over the steak and vegetables.
  7. Cook for an additional 2-3 minutes, stirring frequently, until the sauce has thickened and the steak is cooked to your desired doneness.
  8. Season with salt and pepper to taste.
  9. Serve the stir fry over steamed rice or noodles, and garnish with sliced green onions for a fresh touch.

Tips

  • 💡 For added heat, include sliced jalapeños or red pepper flakes.
  • 💡 Feel free to substitute the flank steak with chicken, shrimp, or tofu for a different protein option.
  • 💡 You can also add other vegetables such as snap peas, broccoli, or carrots for extra nutrition and flavor.
