Bok Choy and Egg Stir Fry

A quick and healthy stir fry recipe featuring bok choy and eggs.

Ingredients

  • Black pepper (to taste)
  • Salt (to taste)
  • Sesame oil (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Ginger (1 teaspoon, grated)
  • Garlic (2 cloves, minced)
  • Eggs (3)
  • Bok choy (4 cups, chopped)

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and grated ginger. Stir fry for 1 minute until fragrant.
  3. Add the chopped bok choy to the skillet and stir fry for 2-3 minutes until wilted.
  4. Push the bok choy to one side of the skillet and crack the eggs into the other side.
  5. Scramble the eggs with a spatula until cooked through.
  6. Combine the bok choy and eggs together in the skillet.
  7. Add soy sauce, salt, and black pepper. Stir fry for another 1-2 minutes.
  8. Remove from heat and serve hot.
  9. Optional: Garnish with sesame seeds or sliced green onions.
