Ingredients
- Bok choy
- 4 cups, chopped
- Eggs
- 4, beaten
- Garlic
- 3 cloves, minced
- Ginger
- 1 tablespoon, grated
- Sesame oil
- 2 tablespoons
- Soy sauce
- 2 tablespoons
- Salt
- to taste
- Black pepper
- to taste
- Sesame seeds
- 1 tablespoon, for garnish (optional)
- Green onions
- 2, sliced for garnish (optional)
Instructions
- Heat the sesame oil in a large skillet or wok over medium heat until shimmering.
- Add the minced garlic and grated ginger to the skillet. Stir fry for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the chopped bok choy to the skillet and stir fry for 2-3 minutes until the leaves are wilted and vibrant green.
- Push the bok choy to one side of the skillet, creating space. Crack the eggs into the other side of the skillet.
- Using a spatula, scramble the eggs until fully cooked through and fluffy, about 2-3 minutes.
- Gently combine the bok choy and scrambled eggs in the skillet, mixing thoroughly.
- Add soy sauce, salt, and black pepper to taste. Stir fry for another 1-2 minutes to allow the flavors to meld.
- Remove from heat and serve hot. Garnish with sesame seeds and sliced green onions if desired.
