Ingredients

Bok choy
4 cups, chopped
Eggs
4, beaten
Garlic
3 cloves, minced
Ginger
1 tablespoon, grated
Sesame oil
2 tablespoons
Soy sauce
2 tablespoons
Salt
to taste
Black pepper
to taste
Sesame seeds
1 tablespoon, for garnish (optional)
Green onions
2, sliced for garnish (optional)

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat until shimmering.
  2. Add the minced garlic and grated ginger to the skillet. Stir fry for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Add the chopped bok choy to the skillet and stir fry for 2-3 minutes until the leaves are wilted and vibrant green.
  4. Push the bok choy to one side of the skillet, creating space. Crack the eggs into the other side of the skillet.
  5. Using a spatula, scramble the eggs until fully cooked through and fluffy, about 2-3 minutes.
  6. Gently combine the bok choy and scrambled eggs in the skillet, mixing thoroughly.
  7. Add soy sauce, salt, and black pepper to taste. Stir fry for another 1-2 minutes to allow the flavors to meld.
  8. Remove from heat and serve hot. Garnish with sesame seeds and sliced green onions if desired.
