
Bok Choy and Salmon Salad
This refreshing salad combines the flavors of bok choy, grilled salmon, and a tangy Asian-inspired dressing.
Ingredients
- Salt and pepper (to taste)
- Garlic (1 clove, minced)
- Ginger (1 teaspoon, grated)
- Honey (1 tablespoon)
- Rice vinegar (1 tablespoon)
- Soy sauce (2 tablespoons)
- Lime (1, juiced)
- Sesame seeds (1 tablespoon)
- Green onions (4, sliced)
- Cucumber (1, thinly sliced)
- Red bell pepper (1, thinly sliced)
- Carrots (1, julienned)
- Bok choy (4 cups, chopped)
- Salmon fillets (2)
Instructions
- Preheat the grill to medium-high heat.
- Season the salmon fillets with salt and pepper.
- Grill the salmon for 4-5 minutes per side, or until cooked through. Set aside to cool.
- In a large bowl, combine the bok choy, carrots, red bell pepper, cucumber, and green onions.
- In a small bowl, whisk together the lime juice, soy sauce, rice vinegar, honey, ginger, garlic, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to coat.
- Flake the grilled salmon into bite-sized pieces and add to the salad.
- Sprinkle with sesame seeds and serve.
