Cooking oil
2 tablespoons
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Cornstarch
1 tablespoon
Vegetable broth
1/2 cup
Sesame oil
1 tablespoon
Soy sauce
3 tablespoons
Ginger
1 tablespoon, freshly grated
Garlic
3 cloves, minced
Snow peas
2 cups
Bok choy
4 cups, chopped

Instructions

  1. In a small bowl, combine the soy sauce, sesame oil, vegetable broth, cornstarch. Season with salt and pepper, then whisk until well combined. Set aside.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and freshly grated ginger to the skillet. Stir fry for 1 minute until fragrant.
  4. Add the chopped bok choy and snow peas to the skillet. Stir fry for 3-4 minutes, until the vegetables are slightly tender yet still retain their vibrant color and crunch.
  5. Pour the prepared sauce over the stir-fried vegetables. Toss well to ensure all the vegetables are coated with the sauce. Continue to stir fry for an additional 2 minutes, until the sauce thickens.
  6. Remove from heat. The Bok Choy and Snow Pea Stir Fry is now ready to be served. Serve hot with a side of steamed rice or quinoa for a complete meal.
