Bok Choy and Snow Pea Stir Fry

- 1 tablespoon Cornstarch
- 1/2 cup Vegetable broth
- 1 tablespoon Sesame oil
- 3 tablespoons Soy sauce
- 1 tablespoon, freshly grated Ginger
- 3 cloves, minced Garlic
- 2 cups Snow peas
- 4 cups, chopped Bok choy

Instructions
- In a small bowl, combine the soy sauce, sesame oil, vegetable broth, cornstarch. Season with salt and pepper, then whisk until well combined. Set aside.
- Heat the cooking oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and freshly grated ginger to the skillet. Stir fry for 1 minute until fragrant.
- Add the chopped bok choy and snow peas to the skillet. Stir fry for 3-4 minutes, until the vegetables are slightly tender yet still retain their vibrant color and crunch.
- Pour the prepared sauce over the stir-fried vegetables. Toss well to ensure all the vegetables are coated with the sauce. Continue to stir fry for an additional 2 minutes, until the sauce thickens.
- Remove from heat. The Bok Choy and Snow Pea Stir Fry is now ready to be served. Serve hot with a side of steamed rice or quinoa for a complete meal.
