
Bok Choy and Vegetable Chow Mein
This delicious chow mein recipe features bok choy and a variety of colorful vegetables stir-fried with noodles in a savory sauce.
Ingredients
- Sesame seeds (1 tablespoon (for garnish))
- Green onions (2, sliced (for garnish))
- Salt and pepper (to taste)
- Cornstarch (1 tablespoon)
- Vegetable broth (1/4 cup)
- Sesame oil (1 tablespoon)
- Soy sauce (3 tablespoons)
- Ginger (1 tablespoon, minced)
- Garlic (3 cloves, minced)
- Mushrooms (8 ounces, sliced)
- Snow peas (1 cup)
- Bell peppers (2, thinly sliced)
- Carrots (2, julienned)
- Bok choy (2 heads, chopped)
- Chow mein noodles (8 ounces)
Instructions
- Cook the chow mein noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together soy sauce, sesame oil, vegetable broth, cornstarch, salt, and pepper. Set aside.
- Heat a large wok or skillet over high heat. Add a tablespoon of oil and swirl to coat the pan.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the sliced mushrooms, julienned carrots, and thinly sliced bell peppers. Stir-fry for 2-3 minutes until the vegetables start to soften.
- Add the chopped bok choy and snow peas. Stir-fry for another 2 minutes until the bok choy wilts slightly.
- Pour the sauce mixture over the vegetables and stir well to coat. Cook for an additional 1-2 minutes until the sauce thickens.
- Add the cooked chow mein noodles to the wok and toss to combine with the vegetables and sauce. Cook for another 2 minutes to heat through.
- Remove from heat and garnish with sliced green onions and sesame seeds.
- Serve hot and enjoy!
