Olive oil
2 tablespoons
Salt
to taste
Black pepper
to taste
Paprika
1 teaspoon
Garlic powder
1 teaspoon
Cheddar cheese
1 cup, shredded
Broccoli florets
1 cup, steamed and chopped
Boneless, skinless chicken breasts
4 pieces
Toothpicks
as needed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally, but not all the way through, creating a pocket for the filling.
  3. In a small bowl, combine garlic powder, paprika, salt, and pepper. Season both sides of the chicken breasts generously with this spice mixture.
  4. On one side of each chicken breast, layer the chopped steamed broccoli and shredded cheddar cheese evenly.
  5. Fold the other side of the chicken breast over the filling and secure it with toothpicks to hold the chicken closed.
  6. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts.
  7. Cook the chicken for 3-4 minutes on each side, or until golden brown.
  8. Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Carefully remove the toothpicks, slice the chicken if desired, and serve hot.
