Instructions
- Preheat the oven to 400°F (200°C).
- Slice the baguette into 1/2-inch thick slices and place them on a baking sheet.
- Brush both sides of each baguette slice with extra virgin olive oil.
- Bake for about 5-7 minutes, or until the bread is toasted and golden brown. Keep an eye on it to prevent burning.
- In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine, ensuring the tomatoes are coated with all the flavors.
- Once the baguette slices are toasted, remove them from the oven and allow to cool slightly.
- Top each toasted baguette slice generously with a spoonful of the tomato mixture.
- Serve immediately for the best texture and flavor.
Tips
- For an extra touch, add a sprinkle of crumbled feta or shaved parmesan on top before serving.
- You can also add a hint of heat by mixing in some red pepper flakes to the tomato mixture.
- If you prefer a sweeter note, reduce the balsamic vinegar in a saucepan over medium heat until it thickens slightly before drizzling over the bruschetta.
