Ingredients

  • Baguette (1, sliced into 1/2-inch thick slices)
  • Extra virgin olive oil (1/4 cup, plus more for brushing)
  • Garlic (2 cloves, minced)
  • Fresh basil (1/4 cup, chopped)
  • Tomatoes (4 large, diced (preferably heirloom or vine-ripened))
  • Balsamic vinegar (2 tablespoons)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch thick slices and place them on a baking sheet.
  3. Brush both sides of each baguette slice with extra virgin olive oil.
  4. Bake for about 5-7 minutes, or until the bread is toasted and golden brown. Keep an eye on it to prevent burning.
  5. In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine, ensuring the tomatoes are coated with all the flavors.
