Transport yourself to a sun-drenched Italian terrace with this vibrant bruschetta. The perfect appetizer, it features crunchy toasted baguette slices topped with a medley of ripe tomatoes, fragrant basil, and zesty garlic. Drizzled with a balsamic reduction, this dish is not only easy to prepare but also a celebration of fresh ingredients that will tantalize your taste buds and impress your guests.

Ingredients

Baguette
1, sliced into 1/2-inch thick slices
Extra virgin olive oil
1/4 cup, plus more for brushing
Garlic
2 cloves, minced
Fresh basil
1/4 cup, chopped
Tomatoes
4 large, diced (preferably heirloom or vine-ripened)
Balsamic vinegar
2 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch thick slices and place them on a baking sheet.
  3. Brush both sides of each baguette slice with extra virgin olive oil.
  4. Bake for about 5-7 minutes, or until the bread is toasted and golden brown. Keep an eye on it to prevent burning.
  5. In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine, ensuring the tomatoes are coated with all the flavors.
  6. Once the baguette slices are toasted, remove them from the oven and allow to cool slightly.
  7. Top each toasted baguette slice generously with a spoonful of the tomato mixture.
  8. Serve immediately for the best texture and flavor.
