Ingredients
- Baguette
- 1, sliced into 1/2-inch thick slices
- Extra virgin olive oil
- 1/4 cup, plus more for brushing
- Garlic
- 2 cloves, minced
- Fresh basil
- 1/4 cup, chopped
- Tomatoes
- 4 large, diced (preferably heirloom or vine-ripened)
- Balsamic vinegar
- 2 tablespoons
- Salt

- Black pepper

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the baguette into 1/2-inch thick slices and place them on a baking sheet.
- Brush both sides of each baguette slice with extra virgin olive oil.
- Bake for about 5-7 minutes, or until the bread is toasted and golden brown. Keep an eye on it to prevent burning.
- In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine, ensuring the tomatoes are coated with all the flavors.
- Once the baguette slices are toasted, remove them from the oven and allow to cool slightly.
- Top each toasted baguette slice generously with a spoonful of the tomato mixture.
- Serve immediately for the best texture and flavor.
Tips
- For an extra touch, add a sprinkle of crumbled feta or shaved parmesan on top before serving.
