Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the chopped carrots and broccoli, cooking for an additional 3-4 minutes until they start to soften.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the vegetables are tender.
- Using an immersion blender, puree the soup directly in the pot until smooth and creamy. Alternatively, you can carefully transfer the soup in batches to a regular blender.
- Stir in the coconut milk and curry powder, mixing well. Season with salt and pepper to taste.
- Allow the soup to simmer for another 5 minutes to let the flavors meld together.
- Serve the soup hot, garnished with fresh cilantro leaves.
Tips
- For a spicier kick, add a pinch of cayenne pepper or a diced jalapeño when sautéing the onion and garlic.
- You can substitute the coconut milk with heavy cream for a richer flavor.
- Add a squeeze of fresh lime juice right before serving for an extra layer of brightness.
