
Chicken and Vegetable Skewers with Basil and Lemon Marinade

Ingredients
- Skewers (8, soaked in water)
- Salt and pepper (to taste)
- Olive oil (1/4 cup)
- Garlic (2 cloves, minced)
- Lemon (1, juiced and zested)
- Basil leaves (1/2 cup, chopped)
- Cherry tomatoes (1 cup)
- Red onion (1, cut into chunks)
- Bell peppers (2, cut into chunks)
- Chicken breast (2, boneless and skinless, cut into cubes)
Instructions
- In a bowl, combine the chopped basil, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper to make the marinade.
- Add the chicken cubes to the marinade and toss to coat. Let it marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat the grill or oven to medium-high heat.
- Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the soaked skewers, alternating between ingredients.
- Grill or bake the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Serve the chicken and vegetable skewers hot, garnished with extra basil leaves if desired.
