Instructions

  1. In a large mixing bowl, combine minced garlic, lemon juice, olive oil, yogurt, paprika, cumin, coriander, turmeric, salt, and pepper to create a rich marinade.
  2. Add the chicken cubes to the marinade and mix well to ensure all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor absorption.
  3. Preheat the grill to medium-high heat, ensuring it's well-oiled to prevent sticking.
  4. While the grill is heating, prepare the skewers by threading the marinated chicken cubes onto them, alternating with chunks of red onion, bell peppers, and cherry tomatoes for a colorful presentation.
  5. Carefully place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and slightly charred on the edges.
  6. While the chicken is grilling, prepare the garlic sauce by mixing equal parts of mayonnaise and yogurt with minced garlic, a squeeze of lemon juice, and a pinch of salt. Adjust the consistency with water if needed.
  7. Once the chicken is cooked, remove the skewers from the grill and allow them to rest for a few minutes before serving.
  8. Serve the Lebanese Shish Tawook hot with a side of garlic sauce, fluffy rice, and a fresh salad.
