Instructions
- In a large mixing bowl, combine minced garlic, lemon juice, olive oil, yogurt, paprika, cumin, coriander, turmeric, salt, and pepper to create a rich marinade.
- Add the chicken cubes to the marinade and mix well to ensure all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor absorption.
- Preheat the grill to medium-high heat, ensuring it's well-oiled to prevent sticking.
- While the grill is heating, prepare the skewers by threading the marinated chicken cubes onto them, alternating with chunks of red onion, bell peppers, and cherry tomatoes for a colorful presentation.
- Carefully place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and slightly charred on the edges.
- While the chicken is grilling, prepare the garlic sauce by mixing equal parts of mayonnaise and yogurt with minced garlic, a squeeze of lemon juice, and a pinch of salt. Adjust the consistency with water if needed.
- Once the chicken is cooked, remove the skewers from the grill and allow them to rest for a few minutes before serving.
- Serve the Lebanese Shish Tawook hot with a side of garlic sauce, fluffy rice, and a fresh salad.
Tips
- For added flavor, marinate the chicken overnight for a richer taste.
- Feel free to experiment with vegetables on the skewers; zucchini and mushrooms work well too!
- If you prefer a spicier kick, add a pinch of cayenne pepper or chili flakes to the marinade.
