Ingredients

  • Basil leaves (a handful, for garnish)
  • Parmesan cheese (1/2 cup, grated)
  • Mozzarella cheese (1 cup, shredded)
  • Tomato sauce (2 cups)
  • Olive oil (2 tablespoons)
  • Breadcrumbs (1 cup)
  • Eggs (2, beaten)
  • All (purpose flour - 1 cup)
  • Salt and pepper (to taste)
  • Chicken breasts (4, boneless and skinless)

  2. Season the chicken breasts with salt and pepper, then dredge them in flour, dip into the beaten eggs, and coat with breadcrumbs.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides, about 5 minutes per side.
  4. Spread a thin layer of tomato sauce in a baking dish. Place the chicken on top, then cover with the remaining sauce.
  5. Sprinkle the mozzarella and Parmesan cheese over the chicken.
  6. Bake for 20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
  7. Garnish with fresh basil leaves before serving.
