Instructions
- Preheat the oven to 375°F.
- In a shallow dish, beat the eggs with salt and pepper.
- In another shallow dish, combine the breadcrumbs and grated Parmesan cheese.
- Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium heat.
- Add the breaded chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side.
- Transfer the chicken breasts to a baking dish.
- Pour the tomato sauce over the chicken breasts, spreading it evenly.
- Sprinkle the shredded mozzarella cheese over the tomato sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh chopped basil before serving.
