Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow dish, beat the eggs and season with salt and pepper.
- In a separate shallow dish, combine the breadcrumbs and grated Parmesan cheese.
- Dip each chicken breast first into the beaten egg mixture, ensuring it's fully coated, then dredge in the breadcrumb mixture, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts.
- Cook the chicken until golden brown on both sides, about 3-4 minutes per side. Ensure not to overcrowd the pan for even browning.
- Transfer the browned chicken breasts to a baking dish.
- Pour the tomato sauce evenly over the chicken breasts. Sprinkle the shredded mozzarella cheese over the tomato sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let the chicken rest for a few minutes before sprinkling with fresh chopped basil and serving.
Tips
- For an extra touch of authenticity, use home-made tomato sauce. If using store-bought, opt for a high-quality brand for the best flavor.
- For a crispy crust, toast the breadcrumbs in the oven before using them to coat the chicken.
- Serve with a side of spaghetti aglio e olio or a light garden salad for a complete meal.
