Authentic Italian Chicken Parmigiana

This classic dish from Southern Italy combines tender, juicy chicken breasts, encased in a golden, crispy breadcrumb and Parmesan crust, smothered in a rich tomato sauce and topped with a generous layer of gooey, melted mozzarella. Ingredients
- Fresh basil
- a handful, roughly chopped
- Mozzarella cheese
- 2 cups, shredded
- Tomato sauce
- 1 cup
- Olive oil
- 3 tablespoons
- Salt and pepper

- 1 cup, grated
- Breadcrumbs
- 1 cup
- Eggs
- 2
- Chicken breasts
- 2, boneless and skinless
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow dish, beat the eggs and season with salt and pepper.
- In a separate shallow dish, combine the breadcrumbs and grated Parmesan cheese.
- Dip each chicken breast first into the beaten egg mixture, ensuring it's fully coated, then dredge in the breadcrumb mixture, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts.
- Cook the chicken until golden brown on both sides, about 3-4 minutes per side. Ensure not to overcrowd the pan for even browning.
- Transfer the browned chicken breasts to a baking dish.
- Pour the tomato sauce evenly over the chicken breasts. Sprinkle the shredded mozzarella cheese over the tomato sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let the chicken rest for a few minutes before sprinkling with fresh chopped basil and serving.
