Ingredients

Original recipe serves 2

Fresh basil
a handful, roughly chopped
Mozzarella cheese
2 cups, shredded
Tomato sauce
1 cup
Olive oil
3 tablespoons
Salt and pepper
to taste
Parmesan cheese
1 cup, grated
Breadcrumbs
1 cup
Eggs

Chicken breasts
2, boneless and skinless

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, beat the eggs and season with salt and pepper.
  3. In a separate shallow dish, combine the breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken breast first into the beaten egg mixture, ensuring it's fully coated, then dredge in the breadcrumb mixture, pressing gently to adhere.
  5. Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts.
  6. Cook the chicken until golden brown on both sides, about 3-4 minutes per side. Ensure not to overcrowd the pan for even browning.
  7. Transfer the browned chicken breasts to a baking dish.
  8. Pour the tomato sauce evenly over the chicken breasts. Sprinkle the shredded mozzarella cheese over the tomato sauce.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Let the chicken rest for a few minutes before sprinkling with fresh chopped basil and serving.
