Servings: 2

Ingredients

Chicken breasts
2 large, boneless and skinless
Chipotle peppers in adobo sauce
2 tablespoons, minced
Lime juice
2 tablespoons, freshly squeezed
Garlic powder
1 teaspoon
Olive oil
2 tablespoons
Salt
1/2 teaspoon
Black pepper
1/2 teaspoon
Avocado
1, sliced
Tomato
1, sliced
Lettuce
1 cup, shredded
Mayonnaise
1/4 cup
Buns
2, preferably whole grain or brioche

Instructions

  1. In a medium bowl, combine the minced chipotle peppers, lime juice, garlic powder, salt, and black pepper to create a marinade.
  2. Add the chicken breasts to the bowl, ensuring they are well-coated with the chipotle mixture. Let marinate for at least 10 minutes, or up to 2 hours for deeper flavor.
  3. Heat olive oil in a skillet over medium heat. Once hot, add the marinated chicken breasts and cook for 6-8 minutes on each side, or until they are cooked through and reach an internal temperature of 165°F (75°C).
  4. While the chicken is cooking, toast the buns in a toaster or on a grill pan until golden brown.
  5. Spread mayonnaise generously on the bottom half of each bun.
  6. Place a cooked chicken breast on each bun, then layer with shredded lettuce, tomato slices, and avocado.
  7. Top with the other half of the bun and serve immediately with extra lime wedges if desired.
