Classic Potato Salad

This classic potato salad is made with boiled potatoes, hard-boiled eggs, and a creamy dressing of mayonnaise, mustard, and sour cream.

Ingredients

  • Parsley (2 tablespoons, chopped)
  • Salt and pepper (to taste)
  • Sour cream (1/4 cup)
  • Dijon mustard (2 tablespoons)
  • Mayonnaise (1/2 cup)
  • Red onion (1/4 cup, chopped)
  • Celery (1/2 cup, chopped)
  • Eggs (4, hard-boiled and chopped)
  • Potatoes (2 pounds, peeled and cubed)

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool.
  2. In a large bowl, combine the potatoes, eggs, celery, and red onion.
  3. In a small bowl, whisk together the mayonnaise, mustard, and sour cream. Season with salt and pepper.
  4. Pour the dressing over the potato mixture and toss to coat.
  5. Garnish with chopped parsley.
