
Classic Potato Salad
This classic potato salad is made with boiled potatoes, hard-boiled eggs, and a creamy dressing of mayonnaise, mustard, and sour cream.
Ingredients
- Parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Sour cream (1/4 cup)
- Dijon mustard (2 tablespoons)
- Mayonnaise (1/2 cup)
- Red onion (1/4 cup, chopped)
- Celery (1/2 cup, chopped)
- Eggs (4, hard-boiled and chopped)
- Potatoes (2 pounds, peeled and cubed)
Instructions
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool.
- In a large bowl, combine the potatoes, eggs, celery, and red onion.
- In a small bowl, whisk together the mayonnaise, mustard, and sour cream. Season with salt and pepper.
- Pour the dressing over the potato mixture and toss to coat.
- Garnish with chopped parsley.
