Ingredients

  • Cod fillets (500g, cooked and flaked)
  • Potatoes (2 large, cooked and mashed)
  • Onion (1 medium, finely chopped)
  • Garlic (2 cloves, minced)
  • Parsley (1/4 cup, finely chopped)
  • Egg (1, beaten)
  • Salt and pepper (to taste)
  • Bread crumbs (1 cup)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the flaked cod, mashed potatoes, finely chopped onion, minced garlic, chopped parsley, beaten egg, and season with salt and pepper. Mix well until all the ingredients are evenly combined.
  2. Shape the mixture into small croquettes, each about 2 inches in length.
  3. Coat each croquette thoroughly with bread crumbs, pressing gently to ensure they adhere.
  4. Heat vegetable oil in a deep pan or skillet over medium heat. The oil should be deep enough to submerge the croquettes.
  5. Fry the croquettes in batches to avoid overcrowding the pan. Cook until they turn golden brown and crispy, about 3-4 minutes per side.
  6. Remove the croquettes from the oil using a slotted spoon and drain on a paper towel-lined plate to absorb any excess oil.
  7. Serve the croquettes hot. They pair well with a tangy aioli or a spicy tomato sauce.
