Ingredients

Cheddar cheese
1 cup, shredded
Paprika
1 teaspoon
Salt and pepper

2 tablespoons
Garlic
2 cloves, minced
Bell pepper

Sausage
1 pound, sliced
Potatoes
4 medium, diced

Instructions

  1. Heat the olive oil in a large, heavy-bottomed skillet over medium heat.
  2. Add the sausage and cook until browned, about 5 minutes. Use a slotted spoon to remove the sausage from the skillet and set it aside on a plate.
  3. In the same skillet with the remaining oil and sausage drippings, add the diced potatoes, onion, bell pepper, minced garlic, paprika, salt, and pepper. Stir well to coat the vegetables in the oil and seasonings.
  4. Cook the mixture for about 20 minutes, or until the potatoes are golden brown and crispy. Stir occasionally to ensure even browning and prevent sticking.
  5. Return the browned sausage to the skillet and stir everything together. Cook for another 5 minutes to heat the sausage through.
  6. Sprinkle the shredded cheddar cheese evenly over the top of the skillet mixture. Cover the skillet and let it sit for a few minutes until the cheese is melted and bubbly.
