Country Potatoes with Sausage

Ingredients

  • Cheddar cheese (1 cup, shredded)
  • Paprika (1 teaspoon)
  • Salt and pepper (to taste)
  • Olive oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Bell pepper (1, chopped)
  • Onion (1 large, chopped)
  • Sausage (1 pound, sliced)
  • Potatoes (4 large, diced)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the potatoes, onion, bell pepper, garlic, salt, pepper, and paprika. Cook until the potatoes are golden and crispy, about 20 minutes.
  4. Return the sausage to the skillet and stir to combine. Cook for another 5 minutes, until everything is heated through.
  5. Sprinkle the shredded cheese over the top and cover the skillet. Let it sit for a few minutes until the cheese is melted.
