Servings: 4

Ingredients

  • Black beans (1 can (15 oz), drained and rinsed)
  • Carrot (1 medium, grated)
  • Onion (1 small, finely chopped)
  • Garlic (2 cloves, minced)
  • Breadcrumbs (1/2 cup)
  • Egg (1, beaten)
  • Olive oil (2 tablespoons)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Burger buns (4, toasted)
  • Lettuce (4 leaves, washed)
  • Tomato (1 large, sliced)
  • Pickles (1/2 cup, sliced)
  • Mayonnaise (1/4 cup)
  • Ketchup (1/4 cup)

Instructions

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the grated carrot, minced garlic, chopped onion, breadcrumbs, beaten egg, salt, and pepper to the mashed beans. Mix well until fully combined.
  3. Form the mixture into 4 equal-sized patties, about 1 inch thick.
  4. Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the patties.
  5. Cook the patties for 5-7 minutes on each side, until they are golden brown and heated through. Be careful when flipping to prevent them from breaking.
  6. While the patties are cooking, prepare the sauce by mixing together the mayonnaise and ketchup in a small bowl.
  7. Once the patties are cooked, assemble the burgers by placing each patty on a toasted burger bun. Top with a lettuce leaf, a slice of tomato, pickles, and a generous spread of the mayonnaise-ketchup sauce.
  8. Serve immediately and enjoy your delicious Farmhouse Veggie Burger!
