Servings: 4
Ingredients
- Black beans (1 can (15 oz), drained and rinsed)
- Carrot (1 medium, grated)
- Onion (1 small, finely chopped)
- Garlic (2 cloves, minced)
- Breadcrumbs (1/2 cup)
- Egg (1, beaten)
- Olive oil (2 tablespoons)
- Salt (1/2 teaspoon)
- Black pepper (1/4 teaspoon)
- Burger buns (4, toasted)
- Lettuce (4 leaves, washed)
- Tomato (1 large, sliced)
- Pickles (1/2 cup, sliced)
- Mayonnaise (1/4 cup)
- Ketchup (1/4 cup)
Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the grated carrot, minced garlic, chopped onion, breadcrumbs, beaten egg, salt, and pepper to the mashed beans. Mix well until fully combined.
- Form the mixture into 4 equal-sized patties, about 1 inch thick.
- Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the patties.
- Cook the patties for 5-7 minutes on each side, until they are golden brown and heated through. Be careful when flipping to prevent them from breaking.
- While the patties are cooking, prepare the sauce by mixing together the mayonnaise and ketchup in a small bowl.
- Once the patties are cooked, assemble the burgers by placing each patty on a toasted burger bun. Top with a lettuce leaf, a slice of tomato, pickles, and a generous spread of the mayonnaise-ketchup sauce.
- Serve immediately and enjoy your delicious Farmhouse Veggie Burger!
