Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the grated carrot, minced garlic, chopped onion, breadcrumbs, beaten egg, salt, and pepper to the mashed beans. Mix well until fully combined.
- Form the mixture into 4 equal-sized patties, about 1 inch thick.
- Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the patties.
- Cook the patties for 5-7 minutes on each side, until they are golden brown and heated through. Be careful when flipping to prevent them from breaking.
