  • White fish fillets (1 lb, cut into chunks)

  • Fresh thyme (1 tablespoon, finely chopped)
  • Bay leaf (1)
  • White wine (1 cup)
  • Fish stock (4 cups)
  • Tomatoes (2 cups, diced)
  • Potatoes (1 cup, diced)
  • Carrots (1 cup, diced)
  • Bell pepper (1 cup, diced)
  • Garlic (2 cloves, minced)
  • Onion (1 medium, finely chopped)
  • Olive oil (2 tablespoons)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the finely chopped onion, minced garlic, diced bell pepper, diced carrots, and diced potatoes. Cook for about 5 minutes, or until the vegetables are slightly softened.
  3. Stir in the diced tomatoes, fish stock, white wine, bay leaf, chopped thyme, salt, and pepper. Bring the mixture to a boil.
  4. After the mixture begins to boil, reduce the heat to low and let it simmer for 20 minutes. This allows the flavors to meld together.
  5. Add the chunks of white fish, peeled shrimp, and cleaned mussels to the pot. Let them cook for an additional 10 minutes, or until the fish is cooked through and the mussels have opened. Discard any mussels that do not open.
  6. Remove the pot from the heat. Discard the bay leaf.
  7. Before serving, garnish the stew with the chopped fresh parsley. This adds a pop of color and a fresh flavor to the dish.
