Gai Med Mamuang

Gai Med Mamuang is a popular Thai stir-fry dish made with chicken, cashews, and vegetables in a savory sauce.

Ingredients

  • Red chili flakes (1/2 teaspoon (optional))
  • Green onions (2 stalks, chopped)
  • Vegetable oil (2 tablespoons)
  • Sugar (1 teaspoon)
  • Fish sauce (1 tablespoon)
  • Oyster sauce (2 tablespoons)
  • Soy sauce (3 tablespoons)
  • Garlic (3 cloves, minced)
  • Onion (1 medium, sliced)
  • Bell peppers (1 red, sliced)
  • Cashews (1 cup)
  • Chicken breast (2 boneless, skinless breasts, sliced)

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, fish sauce, and sugar. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and stir-fry for 1 minute until fragrant.
  4. Add sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  5. Add sliced bell peppers and onion to the pan and stir-fry for another 2-3 minutes until vegetables are slightly tender.
  6. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly.
  7. Add cashews to the pan and cook for an additional 1-2 minutes.
  8. Remove from heat and garnish with chopped green onions and red chili flakes (if desired).
  9. Serve hot with steamed rice or noodles.
