Ingredients
- Chicken breast
- 1 pound, sliced into thin strips
- Cooked rice
- 2 cups, for serving
- Broccoli florets
- 1 cup
- Carrot
- 1 large, julienned
- Bell pepper
- 1, sliced (any color)
- Fresh ginger
- 1 tablespoon, grated
- Garlic
- 3 cloves, minced
- Green onions
- 2, sliced (for garnish)
- Cooking oil
- 2 tablespoons
- Sesame oil
- 1 tablespoon
- Honey
- 1 tablespoon
- Soy sauce
- 2 tablespoons
- Gochujang sauce
- 2 tablespoons
- Salt
- to taste
- Black pepper
- to taste
Instructions
- In a small bowl, whisk together the gochujang sauce, soy sauce, honey, sesame oil, minced garlic, and grated ginger to create the marinade. Set aside.
- Place the sliced chicken in a medium bowl and pour the marinade over it. Toss to ensure all pieces are well-coated. Allow the chicken to marinate for about 10 minutes to absorb the flavors.
- Heat the cooking oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken to the skillet. Cook for 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell pepper, julienned carrot, and broccoli florets. Stir-fry for 3-4 minutes or until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour in any remaining marinade. Stir-fry for an additional 2 minutes, ensuring the chicken and vegetables are well-coated in the sauce.
- Season with salt and pepper to taste. Remove from heat.
