Servings: 4

Ingredients

  • Chicken breast (1 pound, sliced into thin strips)
  • Cooked rice (2 cups, for serving)
  • Broccoli florets (1 cup)
  • Carrot (1 large, julienned)
  • Bell pepper (1, sliced (any color))
  • Fresh ginger (1 tablespoon, grated)
  • Garlic (3 cloves, minced)
  • Green onions (2, sliced (for garnish))
  • Cooking oil (2 tablespoons)
  • Sesame oil (1 tablespoon)
  • Honey (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Gochujang sauce (2 tablespoons)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. In a small bowl, whisk together the gochujang sauce, soy sauce, honey, sesame oil, minced garlic, and grated ginger to create the marinade. Set aside.
  2. Place the sliced chicken in a medium bowl and pour the marinade over it. Toss to ensure all pieces are well-coated. Allow the chicken to marinate for about 10 minutes to absorb the flavors.
  3. Heat the cooking oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken to the skillet. Cook for 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced bell pepper, julienned carrot, and broccoli florets. Stir-fry for 3-4 minutes or until the vegetables are crisp-tender.
  5. Return the cooked chicken to the skillet and pour in any remaining marinade. Stir-fry for an additional 2 minutes, ensuring the chicken and vegetables are well-coated in the sauce.
  6. Season with salt and pepper to taste. Remove from heat.
  7. Garnish with sliced green onions before serving.
  8. Serve the gochujang chicken stir-fry over a bed of warm cooked rice. Enjoy your meal!
