1 pound, sliced into thin strips
Lemon juice
2 tablespoons, freshly squeezed
Fresh ginger
1 tablespoon, grated
Garlic
2 cloves, minced
Soy sauce
3 tablespoons, low-sodium
Honey
1 tablespoon
Vegetable oil
2 tablespoons
Broccoli florets
1 cup
Bell pepper
1, sliced (any color)
Carrot
1, julienned
Green onions
2, sliced (for garnish)
Salt

Instructions

  3. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add the marinated chicken to the skillet, cooking for 5-6 minutes or until browned and cooked through. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the broccoli florets, julienned carrot, and sliced bell pepper. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet and pour in the remaining marinade. Stir fry for an additional 2-3 minutes, ensuring everything is well coated and heated through.
