Instructions
- In a medium bowl, whisk together the lemon juice, grated ginger, minced garlic, soy sauce, and honey to create a flavorful marinade.
- Add the sliced chicken to the marinade, ensuring each piece is well coated. Allow it to marinate for 10 minutes to absorb the flavors.
- Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Add the marinated chicken to the skillet, cooking for 5-6 minutes or until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli florets, julienned carrot, and sliced bell pepper. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour in the remaining marinade. Stir fry for an additional 2-3 minutes, ensuring everything is well coated and heated through.
- Season with salt and pepper to taste, adjusting according to your preference.
- Serve the lemon ginger chicken stir fry over a bed of warm cooked rice and garnish with sliced green onions.
Tips
- For added crunch, toss in some cashews or sesame seeds just before serving.
- Feel free to substitute the chicken with tofu or shrimp for a different protein option.
