Ingredients
- Chicken breast
- 1 pound, cooked and shredded
- Cabbage
- 2 cups, shredded
- Carrots
- 1 cup, julienned
- Cucumber
- 1 cup, thinly sliced
- Fresh mint leaves
- 1/2 cup, chopped
- Cilantro
- 1/2 cup, chopped
- Red chili
- 1, finely sliced (adjust to taste)
- Garlic
- 2 cloves, minced
- Fish sauce
- 3 tablespoons
- Lime juice
- 3 tablespoons, freshly squeezed
- Sugar
- 1 tablespoon
- Roasted peanuts
- 1/4 cup, crushed (for garnish)
Instructions
- In a large mixing bowl, combine the shredded chicken, shredded cabbage, julienned carrots, sliced cucumber, chopped mint leaves, and chopped cilantro. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the lime juice, fish sauce, sugar, minced garlic, and sliced red chili to create the dressing. Adjust the seasoning according to your taste preference.
- Pour the dressing over the salad mixture and toss everything together until well coated with the dressing.
