Goi Ga is a refreshing Vietnamese chicken salad made with poached chicken, fresh herbs, and a tangy dressing.
Ingredients
- Red chili (1, thinly sliced)
- Garlic (2 cloves, minced)
- Sugar (1 tablespoon)
- Fish sauce (2 tablespoons)
- Lime juice (2 tablespoons)
- Roasted peanuts (1/4 cup, crushed)
- Cilantro (1/2 cup, chopped)
- Mint leaves (1/2 cup, chopped)
- Cucumber (1, thinly sliced)
- Carrots (1 cup, julienned)
- Cabbage (2 cups, thinly sliced)
- Chicken breast (2 cups, cooked and shredded)
Instructions
- In a large bowl, combine the shredded chicken, cabbage, carrots, cucumber, mint leaves, and cilantro.
- In a small bowl, whisk together the lime juice, fish sauce, sugar, garlic, and red chili.
- Pour the dressing over the salad and toss to combine.
- Garnish with crushed roasted peanuts.
- Serve chilled and enjoy!
