Homemade Apple Sauce

Instructions
- In a large saucepan, combine the chopped apples, water, sugar, cinnamon, and lemon juice. Stir well to mix.
- Place the saucepan over medium heat and bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the mixture simmer for 20-25 minutes, or until the apples are soft and tender. Stir occasionally to prevent sticking.
- Remove the saucepan from the heat and let the mixture cool down slightly.
- Once cooled, use a blender or immersion blender to process the mixture until it reaches a smooth consistency. If you prefer a chunkier sauce, blend less.
- Taste the apple sauce. If needed, add more sugar to attain your desired level of sweetness. Blend again if more sugar is added.
- Transfer the apple sauce to a jar or container and let it cool down to room temperature. Once cooled, refrigerate the sauce until chilled.
- Serve the chilled apple sauce as a side dish or use it as a topping for pancakes, oatmeal, or desserts. It's also a delicious accompaniment for pork dishes.
