Hungarian Goulash

This traditional Hungarian goulash is a hearty and flavorful stew made with tender beef, onions, paprika, and caraway seeds.

Ingredients

  • Fresh parsley (2 tablespoons, chopped)
  • Sour cream (1/2 cup)
  • Salt and pepper (to taste)
  • Bell peppers (2, sliced)
  • Potatoes (4 medium, peeled and cubed)
  • Beef broth (4 cups)
  • Tomato paste (2 tablespoons)
  • Caraway seeds (1 teaspoon)
  • Paprika (2 tablespoons)
  • Garlic (4 cloves, minced)
  • Onions (2 large, chopped)
  • Beef stew meat (2 pounds, cubed)

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Add the beef stew meat and brown on all sides.
  4. Stir in the paprika, caraway seeds, and tomato paste.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Add the cubed potatoes and sliced bell peppers to the pot.
  8. Continue simmering for another 30 minutes, or until the potatoes are cooked through.
  9. Season with salt and pepper to taste.
  10. Serve the goulash hot, garnished with a dollop of sour cream and chopped fresh parsley.
