
Italian Meatballs in Tomato Sauce

Ingredients
- Basil (1/4 cup, chopped)
- Canned tomatoes (28 ounces)
- Onion (1, chopped)
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Parsley (1/4 cup, chopped)
- Eggs (2)
- Garlic (2 cloves, minced)
- Parmesan cheese (1/2 cup, grated)
- Breadcrumbs (1 cup)
- Ground pork (1/2 pound)
- Ground beef (1 pound)
Instructions
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan, garlic, eggs, parsley, salt, and pepper. Mix until well combined.
- Form the mixture into 1-inch meatballs and set aside.
- Heat the olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes. Remove the meatballs from the pot and set aside.
- In the same pot, add the onion and cook until softened, about 5 minutes.
- Add the canned tomatoes and basil to the pot. Bring to a simmer.
- Return the meatballs to the pot and simmer in the sauce for 30 minutes, or until the meatballs are cooked through.
- Serve the meatballs and sauce over cooked pasta or with crusty bread.
