  • Skewers (8 (soaked in water if wooden))
  • Olive oil (2 tablespoons)
  • Black pepper (1 teaspoon)
  • Salt (1 teaspoon)
  • Paprika (1 tablespoon)
  • Coriander (1 teaspoon)
  • Cumin (1 teaspoon)
  • Cilantro (1/4 cup, chopped)
  • Garlic (3 cloves, minced)
  • Onion (1 medium, finely chopped)
  • Ground beef (1.5 pounds)
  • Yogurt sauce (for serving)
  • Cucumber (1, finely diced (for yogurt sauce))
  • Lemon juice (1 tablespoon (for yogurt sauce))
  • Garlic powder (1/2 teaspoon (for yogurt sauce))

Instructions

  1. In a large bowl, combine the ground beef, chopped onion, minced garlic, chopped cilantro, cumin, coriander, paprika, salt, and black pepper. Mix well until fully combined.
  2. Divide the mixture into 8 equal portions and shape each portion into a long, cylindrical shape around a skewer, making sure to press firmly to hold the shape.
  3. Preheat the grill to medium-high heat.
  4. Brush the kofta kebabs with olive oil to help them brown nicely on the grill.
  5. Grill the kebabs for about 6-8 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
  6. While the kebabs are grilling, prepare the yogurt sauce by combining yogurt, diced cucumber, lemon juice, and garlic powder in a small bowl. Mix well and season with salt to taste.
