Kuksi - Albanian Cold Yogurt Soup

Ingredients
- Greek yogurt
- 2 cups
- Cucumbers
- 2 medium, peeled and finely diced
- Fresh mint
- 1/4 cup, finely chopped
- Fresh dill
- 1/4 cup, finely chopped
- Garlic
- 2 cloves, minced
- Lemon juice
- 2 tablespoons
- Olive oil
- 1 tablespoon
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
- Water
- 1 to 1.5 cups, to adjust consistency
- Ice cubes

Instructions
- In a large mixing bowl, combine the Greek yogurt, diced cucumbers, chopped dill, chopped mint, minced garlic, lemon juice, olive oil, salt, and pepper.
- Using a whisk or spoon, mix the ingredients together until well blended and smooth.
- Gradually add water, a little at a time, stirring continuously until the soup reaches your desired consistency, whether thick or more soupy.
- Once mixed, cover the bowl with plastic wrap and chill the kuksi in the refrigerator for at least 1 hour to allow the flavors to meld.
- Before serving, stir the soup gently and taste to adjust seasoning if necessary.
- Serve the kuksi in bowls, garnished with ice cubes and additional chopped herbs for a fresh touch.
