Servings: 6

Ingredients

Wooden skewers
12
Lamb leg or shoulder
1.5 pounds, cut into 1-inch cubes
Cherry tomatoes
24
Red onion
2 medium, cut into 1-inch pieces
Bell peppers
2 large, cut into 1-inch pieces
Greek yogurt
1 cup
Garlic
3 cloves, minced
Lemon juice
2 tablespoons
Olive oil
3 tablespoons
Paprika
1 teaspoon
Cumin
1 teaspoon
Coriander
1 teaspoon
Salt
1 teaspoon
Pepper
1/2 teaspoon

Instructions

  1. Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  2. In a large bowl, combine the Greek yogurt, minced garlic, lemon juice, olive oil, paprika, cumin, coriander, salt, and pepper to form a savory marinade.
  3. Add the lamb cubes to the marinade, ensuring each piece is well-coated. Cover the bowl and refrigerate for at least 2 hours, or overnight if time allows.
  4. When ready to cook, preheat the grill to medium-high heat.
  5. Thread the marinated lamb cubes onto the soaked skewers, alternating with pieces of bell pepper, red onion, and cherry tomatoes.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your liking.
  7. Remove the kebabs from the grill and allow them to rest for a few minutes before serving to let the juices redistribute.
  8. Serve hot with a side of rice, salad, or flatbread for a complete Middle Eastern meal.
