Ingredients

Ground chicken
1 pound
Red onion
1 small, finely chopped
Fresh mint leaves
1/4 cup, chopped
Fresh cilantro leaves
1/4 cup, chopped
Fresh Thai basil leaves
1/4 cup, chopped
Rice noodles
2 ounces, cooked according to package instructions
Lettuce leaves
8 large leaves (butter or iceberg)
Red chili pepper
1, thinly sliced (adjust to taste)
Roasted peanuts
1/4 cup, chopped
Lime juice
3 tablespoons
Fish sauce
2 tablespoons
Soy sauce
1 tablespoon
Sugar
1 teaspoon

Instructions

  1. In a large skillet, heat a drizzle of oil over medium heat. Add the ground chicken and cook until browned and cooked through, breaking it apart with a spoon as it cooks, about 5-7 minutes.
  2. While the chicken is cooking, prepare the dressing by whisking together the lime juice, fish sauce, soy sauce, and sugar in a small bowl until the sugar is dissolved.
  3. In a large mixing bowl, combine the cooked ground chicken, chopped red onion, mint leaves, cilantro leaves, Thai basil leaves, and cooked rice noodles.
  4. Pour the dressing over the chicken mixture and gently toss to coat all the ingredients evenly.
  5. To assemble the wraps, take a lettuce leaf and place a generous spoonful of the chicken mixture in the center.
  6. Top with a sprinkle of chopped peanuts and a few slices of red chili pepper for a kick.
  7. Fold the sides of the lettuce leaf over the filling and roll it up tightly to secure the contents.
  8. Repeat the assembly process with the remaining lettuce leaves and chicken mixture.
