Laotian Larb Chicken Wraps

- Ground chicken
- 1 pound
- Red onion
- 1 small, finely chopped
- Fresh mint leaves
- 1/4 cup, chopped
- Fresh cilantro leaves
- 1/4 cup, chopped
- Fresh Thai basil leaves
- 1/4 cup, chopped
- Rice noodles
- 2 ounces, cooked according to package instructions
- Lettuce leaves
- 8 large leaves (butter or iceberg)
- Red chili pepper
- 1, thinly sliced (adjust to taste)
- Roasted peanuts
- 1/4 cup, chopped
- Lime juice
- 3 tablespoons
- Fish sauce
- 2 tablespoons
- Soy sauce
- 1 tablespoon
- Sugar
- 1 teaspoon
Instructions
- In a large skillet, heat a drizzle of oil over medium heat. Add the ground chicken and cook until browned and cooked through, breaking it apart with a spoon as it cooks, about 5-7 minutes.
- While the chicken is cooking, prepare the dressing by whisking together the lime juice, fish sauce, soy sauce, and sugar in a small bowl until the sugar is dissolved.
- In a large mixing bowl, combine the cooked ground chicken, chopped red onion, mint leaves, cilantro leaves, Thai basil leaves, and cooked rice noodles.
- Pour the dressing over the chicken mixture and gently toss to coat all the ingredients evenly.
- To assemble the wraps, take a lettuce leaf and place a generous spoonful of the chicken mixture in the center.
- Top with a sprinkle of chopped peanuts and a few slices of red chili pepper for a kick.
- Fold the sides of the lettuce leaf over the filling and roll it up tightly to secure the contents.
