Ingredients
- Red chili pepper (1, thinly sliced)
- Roasted peanuts (1/4 cup, chopped)
- Rice noodles (1 cup, cooked)
- Lettuce leaves (8)
- Fresh thai basil leaves (1/4 cup, chopped)
- Fresh cilantro leaves (1/2 cup, chopped)
- Fresh mint leaves (1/2 cup, chopped)
- Red onion (1/2 cup, thinly sliced)
- Sugar (1 teaspoon)
- Soy sauce (1 tablespoon)
- Fish sauce (2 tablespoons)
- Lime juice (2 tablespoons)
- Ground chicken (1 pound)
Instructions
- In a large skillet, cook the ground chicken over medium heat until browned and cooked through.
- In a small bowl, whisk together the lime juice, fish sauce, soy sauce, and sugar to make the dressing.
- In a large mixing bowl, combine the cooked ground chicken, red onion, mint leaves, cilantro leaves, Thai basil leaves, and rice noodles.
- Pour the dressing over the chicken mixture and toss to coat everything evenly.
- To assemble the wraps, place a lettuce leaf on a plate and spoon some of the chicken mixture onto the center of the leaf.
- Sprinkle with chopped peanuts and sliced red chili pepper.
