Ingredients

Original recipe serves 4

Shrimp
1 pound, peeled and deveined
Broccoli florets
2 cups
Bell pepper
1, sliced (any color)
Green onions
2, sliced
Garlic
3 cloves, minced
Fresh ginger
1 tablespoon, grated
Vegetable oil
2 tablespoons
Salt
to taste
Black pepper
to taste
Cornstarch
1 tablespoon
Honey
2 tablespoons
Lemon juice
3 tablespoons, freshly squeezed
Soy sauce
3 tablespoons

Instructions

  1. In a small bowl, whisk together soy sauce, lemon juice, honey, and cornstarch until smooth. Set aside for later use.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and grated ginger to the skillet and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Add shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add sliced bell pepper and broccoli florets. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  6. Return the cooked shrimp to the skillet. Pour the prepared sauce mixture over the shrimp and vegetables.
  7. Cook for an additional 2 minutes, stirring constantly, until the sauce thickens and coats the shrimp and vegetables perfectly.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions before serving. Enjoy hot over steamed rice or noodles.
