Instructions
- Rinse the white rice under cold water in a fine-mesh strainer until the water runs clear. This step removes excess starch and helps achieve fluffy rice.
- In a medium saucepan, bring 2 cups of water to a boil over medium-high heat.
- Add the rinsed rice and salt to the boiling water. Stir briefly to prevent sticking.
- Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes, or until the rice is tender and the water is completely absorbed.
- Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. This allows the rice to steam and further enhances its texture.
- Fluff the rice gently with a fork to separate the grains. Then, add the olive oil (if using), lime juice, lime zest, and chopped cilantro.
- Stir well to combine all the ingredients, ensuring the rice is evenly coated with the zesty lime and cilantro mixture.
- Serve the Zesty Lime and Cilantro Rice warm, alongside your favorite dishes, such as grilled chicken, fish tacos, or spicy stir-fried vegetables.
Tips
- For a spicier kick, add a pinch of cayenne pepper or diced jalapeños to the rice while it cooks.
- You can replace white rice with brown rice or quinoa for a healthier twist, adjusting the cooking time as needed.
- This rice can also be served cold in a refreshing salad with black beans, corn, and diced tomatoes.
