Mediterranean Chicken Pita

Ingredients

Pita bread
4 pieces
Salt and pepper

Fresh parsley
1/2 cup, chopped
Kalamata olives
1/2 cup, sliced
Red onion
1 small, thinly sliced
Tomato
1 large, diced
Cucumber
1 medium, diced
Greek yogurt
1 cup
Garlic
2 cloves, minced
Lemon juice
2 tablespoons
Olive oil
3 tablespoons
Chicken breast
2 pieces, boneless and skinless

Instructions

  1. In a bowl, whisk together 2 tablespoons of olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts, coating them thoroughly in the marinade. Let them marinate for a minimum of 15 minutes, or up to overnight in the refrigerator for deeper flavor.
  2. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes on each side, until the internal temperature reaches 165°F. Let the chicken rest for a few minutes to allow the juices to redistribute, then slice it into thin, bite-sized strips.
