Servings: 4

Ingredients

  • Pita bread (4 pieces)
  • Salt and pepper (to taste)
  • Fresh parsley (1/2 cup, chopped)
  • Kalamata olives (1/2 cup, sliced)
  • Red onion (1 small, thinly sliced)
  • Tomato (1 large, diced)
  • Cucumber (1 medium, diced)
  • Greek yogurt (1 cup)
  • Garlic (2 cloves, minced)
  • Lemon juice (2 tablespoons)
  • Olive oil (3 tablespoons)
  • Chicken breast (2 pieces, boneless and skinless)

Instructions

  1. In a bowl, whisk together 2 tablespoons of olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts, coating them thoroughly in the marinade. Let them marinate for a minimum of 15 minutes, or up to overnight in the refrigerator for deeper flavor.
  2. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes on each side, until the internal temperature reaches 165°F. Let the chicken rest for a few minutes to allow the juices to redistribute, then slice it into thin, bite-sized strips.
  3. In a separate bowl, prepare the yogurt sauce. Combine Greek yogurt, diced cucumber, diced tomato, sliced red onion, sliced Kalamata olives, chopped fresh parsley, and a drizzle of olive oil. Season with salt and pepper to taste. Mix well until all ingredients are evenly distributed.
  4. Warm the pita bread in a toaster or oven until it's slightly crisp on the outside but still soft on the inside.
  5. Spread a generous layer of the yogurt sauce onto each piece of warm pita bread.
  6. Arrange the sliced grilled chicken on top of the yogurt sauce, adding additional fresh vegetables if desired for extra crunch and freshness.
  7. Fold the pita bread in half, creating a sandwich, and serve immediately while still warm. Enjoy this taste of the Mediterranean right at your own dinner table!
