Smoked paprika
1 teaspoon
Dried thyme
1 teaspoon
Dried oregano
1 teaspoon
Garlic
3 cloves, minced
Lemon juice
3 tablespoons
Olive oil
1/4 cup
Chicken breasts
2 large, cut into 1-inch pieces

Instructions

  1. Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, smoked paprika, salt, and pepper to create the marinade.
  3. Place bite-sized chicken pieces in a ziplock bag or a shallow dish. Pour the marinade over the chicken ensuring all pieces are well coated. Refrigerate for at least 1 hour, or ideally overnight for the flavors to fully infuse.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken pieces onto the skewers, alternating with pieces of red onion, bell pepper, and cherry tomatoes.
  6. Grill the skewers for approximately 10-12 minutes, turning occasionally for even cooking and a nice char on all sides.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving, allowing the juices to redistribute within the chicken.
