
Memil Buchimgae
Memil Buchimgae is a traditional Korean pancake made with buckwheat flour and various vegetables. It is crispy on the outside and chewy on the inside.
Ingredients
- Vegetable oil (2 tablespoons)
- Soy sauce (2 tablespoons)
- Salt (1/2 teaspoon)
- Green onion (2 stalks, chopped)
- Carrot (1 medium, grated)
- Zucchini (1 medium, grated)
- Egg (1)
- Water (1 cup)
- All (purpose flour - 1/2 cup)
- Buckwheat flour (1 cup)
Instructions
- In a large bowl, combine the buckwheat flour, all-purpose flour, water, egg, grated zucchini, grated carrot, chopped green onion, salt, and soy sauce. Mix well to form a batter.
- Heat vegetable oil in a non-stick skillet over medium heat.
- Pour a ladleful of the batter onto the skillet and spread it evenly to form a pancake.
- Cook for 2-3 minutes on each side, until golden brown and crispy.
- Repeat with the remaining batter to make more pancakes.
- Serve the Memil Buchimgae hot with a dipping sauce of your choice.
