Memil Buchimgae

Memil Buchimgae is a traditional Korean pancake made with buckwheat flour and various vegetables. It is crispy on the outside and chewy on the inside.

Ingredients

  • Vegetable oil (2 tablespoons)
  • Soy sauce (2 tablespoons)
  • Salt (1/2 teaspoon)
  • Green onion (2 stalks, chopped)
  • Carrot (1 medium, grated)
  • Zucchini (1 medium, grated)
  • Egg (1)
  • Water (1 cup)
  • All (purpose flour - 1/2 cup)
  • Buckwheat flour (1 cup)

Instructions

  1. In a large bowl, combine the buckwheat flour, all-purpose flour, water, egg, grated zucchini, grated carrot, chopped green onion, salt, and soy sauce. Mix well to form a batter.
  2. Heat vegetable oil in a non-stick skillet over medium heat.
  3. Pour a ladleful of the batter onto the skillet and spread it evenly to form a pancake.
  4. Cook for 2-3 minutes on each side, until golden brown and crispy.
  5. Repeat with the remaining batter to make more pancakes.
  6. Serve the Memil Buchimgae hot with a dipping sauce of your choice.
