Mexican Tacos al Pastor

Tacos al Pastor are a popular Mexican street food made with marinated pork, pineapple, and traditional spices.

Ingredients

  • Lime wedges (for serving)
  • Onion (1/2 cup, diced)
  • Cilantro (1/2 cup, chopped)
  • Fresh pineapple (1 cup, diced)
  • Corn tortillas (12)
  • Salt and pepper (to taste)
  • Oregano (1 teaspoon)
  • Cumin (1 teaspoon)
  • Garlic (4 cloves, minced)
  • Pineapple juice (1 cup)
  • Achiote paste (2 tablespoons)
  • Pork shoulder (2 pounds, thinly sliced)

Instructions

  1. In a large bowl, combine the achiote paste, pineapple juice, minced garlic, cumin, oregano, salt, and pepper to make the marinade.
  2. Add the thinly sliced pork shoulder to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Remove the marinated pork from the refrigerator and thread onto skewers. Discard any excess marinade.
  5. Grill the pork skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  6. While the pork is grilling, warm the corn tortillas on a separate grill or in a dry skillet.
  7. Once the pork is cooked, remove it from the skewers and chop into small pieces.
  8. To assemble the tacos, place a spoonful of the chopped pork onto each warm tortilla.
  9. Top with diced fresh pineapple, chopped cilantro, and diced onion.
  10. Serve the tacos al pastor with lime wedges on the side for squeezing over the top.
