Molotes
Molotes are delightful traditional Mexican appetizers, featuring a crispy exterior and a warm, savory filling. These half-moon shaped delights are made from masa dough, providing a perfect canvas for various fillings, typically refried beans and queso fresco. Ingredients
- Masa harina
- 2 cups
- Water
- 1 cup (adjust as needed)
- Salt
- 1/2 teaspoon
- Refried beans
- 1 cup
- Queso fresco
- 1 cup, crumbled
- Vegetable oil
- for frying
- Salsa
- for serving
Instructions
- In a large bowl, combine the masa harina, water, and salt. Mix until a smooth dough forms. If the dough is too dry, add more water, 1 tablespoon at a time.
- Divide the dough into small balls, roughly the size of a golf ball.
- On a clean surface, flatten each ball into a disc about 1/4 inch thick using your hands or a tortilla press.
- Place a generous spoonful of refried beans and a sprinkle of crumbled queso fresco in the center of each disc.
- Carefully fold the dough over the filling to form a half-moon shape. Press the edges together firmly to seal, and use a fork to crimp the edges for extra security.
- In a large skillet, heat enough vegetable oil over medium-high heat to cover the bottom of the pan.
- Once the oil is hot, carefully place the molotes in the skillet, frying them until they turn golden brown and crispy, about 2-3 minutes per side.
- Remove the molotes from the skillet and drain them on paper towels to remove excess oil.
- Serve warm with your favorite salsa for dipping.
Tips
- For a spicy kick, add diced jalapeños or chili powder to the refried beans.
- Feel free to experiment with different fillings, such as shredded chicken, potatoes, or cheese.
- To make them healthier, consider baking the molotes instead of frying. Preheat your oven to 400°F (200°C), brush them with a little oil, and bake for about 20 minutes.
