Tlacoyos

Tlacoyos are traditional Mexican street food. They are thick corn dough tortillas stuffed with beans, cheese, or other ingredients, and often topped with salsa and cactus.

Ingredients

  • Salt (to taste)
  • Cactus (1 cup, cooked and chopped)
  • Salsa (1 cup)
  • Queso fresco (1 cup, crumbled)
  • Refried beans (1 cup)
  • Warm water (1 1/2 cups)
  • Masa harina (2 cups)

Instructions

  1. In a large bowl, mix the masa harina with the warm water and a pinch of salt until a soft dough forms.
  2. Divide the dough into 8 equal portions and shape each one into a ball.
  3. Flatten each ball into a disc and place a spoonful of refried beans in the center. Fold the dough over the beans and seal the edges, then shape into an oval.
  4. Heat a griddle or skillet over medium heat. Cook the tlacoyos for about 5 minutes on each side, or until they are golden and crispy.
  5. Top the tlacoyos with the crumbled queso fresco, salsa, and cooked cactus. Serve hot.
